Thank Me ‘Again’, Banana Bread

Basically this is a rehash of a previous recipe post I made – I have had someone ask me for it, so I figured it is just as easy to do this again than to send them trawling through all my recipe lists.

Thank Me Banana Bread

I actually made two loaf cakes, as it’s more economical to fill my oven and run it, I had lots of bananas laying about anyway.

Recipe for 2 loaf cakes.

4-5 bananas
2/3 cup melted butter
3 cups self raising flour
1/2 teaspoon baking powder
1.5 cups caster sugar
2 eggs
2 teaspoons vanilla essence

100g/1 large bar milk chocolate (cheap store brand is fine). I usually use a bar per cake but that’s all I had today so 1 bar for two cakes had to do. Just use what you have in the house. Break the chocolate up into small chunks.

Method

Preheat your oven to 175C/350F.
Grease or line two (2lb) loaf tins.
In a large bowl melt the butter.
Into the same bowl mash up the bananas.
Add in all the other ingredients except the chocolate and use a mixer to mix well. (This is what I did different, usually, I mix banana cake by hand).
Then the most important ingredient – stir in the chocolate.

Divide the mix into the two loaf tins.

Bake for approximately 45 minutes. Test for doneness by inserting a cocktail stick and see if it comes out clean.

Cool in the tins for around 20 minutes.

Lift out onto a wire rack till completely cool.

Enjoy, and you WILL ‘thank me’ again for this recipe.
